I discovered this alternative to Bucks Fizz / Mimosas a few years ago when I was living with friends in Cardiff and we celebrated Christmas at many points throughout December. My housemate Paul brought this Jamie Oliver recipe to my attention and I think I’ve had this prosecco cocktail most years since.
It’s fresh, classy and not too heavy, so could be perfect on Christmas morning, as an aperitif or when your friends swing by on a week night, plus it’s really simple.
- Pomegranate juice (from a carton really is fine, even though Jamie uses fresh)
- Your favourite sparkling wine (cava, prosecco or champagne, if you’re really fancy – I used prosecco, but I’d happily use cava too)
Fill a flute (please a flute, you need the right glassware) 1/3 with pomegranate juice, top up with sparkling wine slowly so it doesn’t bubble over, enjoy!
