Returning home from the pub last night (after a free dinner!) we fancied a daiquiri, but we were out of rum. We did, however, have some dry sherry that my friend Laura had been given as a gift. Using this I adapted a basic daiquiri recipe to create
The Sherry Daiquiri
OK, so it doesn’t necessarily looks like the most glamorous of cocktails, but you could dress it with some lime or orange peel. Put a cherry or an umbrella in it if you fancy.
Recipe
2 parts sherry
1 part lime juice
1 part sugar syrup* (1/2 part if you’re using sweet sherry)
I’m not sure if there is a particular order to mixing this, but we just threw it all in a cocktail shaker with some ice, shook and then served in Martini glasses.
We noticed the sherry we used gave kind of a smoky flavour.

* You can buy sugar syrup in the supermarket, but I make my own using equal volumes of sugar and water (4 cups water, 4 cups sugar for example) and melt the sugar in the water over a low heat.
